Ive had a bag of green lentils sitting in my cabinet for quite somee time now... anyone have a soup recipe I can make with it? Thanks!

1 Tablespoon olive oil
1 large onion, chopped
3 carrots, chopped
3 stalks celery, chopped
1 green or red pepper, chopped
2-4 garlic cloves, finely chopped
1 cup brown (or red) lentils (picked over and rinsed)
6 cups of of chicken or veggie stock- or water
1 teaspoon cumin
1/4 teaspoon ginger
1/4 teaspoon cloves
pinch of cinnamon
Juice of one lemon
Saute' onion, celery, carrots & peppers in olive oil until soft and translucent (do not brown); add garlic and saute' 30 seconds or so . Add remaining ingredients. Bring to boil, reduce heat and simmer for 1-1/2 - 2 hours. Enjoy! You can play with the spices or add other veggies, whatever you like. Garnish with the lemon juice. You can also make it in a crock pot.

thanks alot! maybe ill make it tom for after the fast.. if I make it in a crockpot how long does it have to cook?

The only time I made it in the crock pot, I put it on around 7:30 a.m., and we had it for dinner around 5:30 or 6:00. I don't think it needs to be on quite that long, but it turned out nicely.
