Do I use chicken breast?
What's the best way to make it in advance?
Should it be sliced really thin?
Recipe?
TIA. I have no idea how to make Mexican food...

chicken breast is ideal(I prefer dark).slice them in thin long strips
I usually do the chicken after I have used the pan for the veggies(I don't rinse the pan).
make sure to use lots of seasonings(chicken seasonings,paprika,black p,salt,onion powder leave out the garlic powder).

I tend to use chicken breast, sliced into strips. I'll saute them in a pan with just a little oil, along with strips of green and red peppers and strips of onions.
Season with black pepper, paprika, garlic powder and just a tiny bit of chili powder.

When I make fajitas I first sautee onions and garlic. Then I add some sliced bell peppers, then the chicken, and season it with at least a half tablespoon of chili powder, 1/2 tbsp of cumin, and garlic powder.

I make mine like defy. I also squeeze a lime into it.
Actually I made it tonight and cheated and used a fajita seasoning dressing. It was in the BBQ section of the grocery store. It was really yummy. (I still added the lime, it helps tenderize the meat.

onions and peppers are being made fresh, on the day, separately. We are doing a fajito and taco bar so I'm keeping everything separate.

I made this last night.
sauted the veggies then put in a bowl
sauted thin stips of chicken breast (easier when frozen a bit) then made a sauce of
1 cup water
1/4 cup soysauce
5 cloves crushed garlic
tablespoon dijon mustarrd
1/2 tablespoon cornstarch
pour over teh chicken boil, then add veggies

I almost never freeze chicken. It loses its fresh taste that way.

This is not quite mexican style, but when I prepare chicken for wraps, I marinate thin strips of chicken breast in oil and shwarma seasoning. Then I grill it write before and it tastes delicious!! It's probably not ideal for a taco and fajita type bar but it makes a great dinner.
