I got the recipe from a friend who gave it over from KBD lightens up she could not stop raving about it - I was not so excited about it. But maybe I did something wrong.

Here is the recipe in case you want to try it:

2 lg butternut squash peeled
1/4 cup Apricot preserves
4 tsp teriyaki
1 tsp mustard

Preheat oven to 375.
Cover 2 cookies sheets with parchment
Cut neck into thin slices (use the part with seeds for something else like soup)
Lay squash on the cookie sheet.
Mix the rest of the ingredients until smooth.
Paint both sides of squash with the sauce.
Back 40 min until roasted and sticky.

Its not really a recipe. I slice green and yellow squash with the skin on into spears and lay in a single layer in a greased baking pan. I drizzle with balsamic vinegar and olive oil and sprinkle with coarse salt. bake at 375 for 30 minutes or more until soft.

Its originally got it from the Dining In cookbook your supposed to use a lot more vegetables and then mix it with pasta and a dressing but I like the vegetables alone you can add anything like red pepper, eggplant, red peppers, etc.

Willow, it's really easy and it's for non-gluten eaters.

6 eggs separated, put aside 3 yolks and use the other three for something else
1 package baking powder
6 level tablespoons buckwheat flour
6 tablespoons sugar

Beat eggwhites to a snow with the sugar. Take some out and mix in a different bowl with the yolks until they are fluffy and light colored. Put into eggwhites and mix with spatula. Add baking powder and buckwheat flour and fold in lightly with spatula. Put into pan greased with pam or a tiny drop of oil.

Take ten tablespoons buckwheat flour and five heaping spoons of sugar, some white sugar and some brown sugar if you have. We use organic so it's kind of beige in the first place. Adda tablespoon of cinnamon. Add a tablespoon of oil. Mix with hands until it becomes grainy. If it is too wet add more buckwheat flour, if it is too dry add a drop more oil. Spread or rather toss on top of cake in pan.

Bake for about half an hour at 350 degrees or until a toothpick comes out clean or at least dry. Could need another ten minutes depending on the depth of the pan.

I'm very not precise about the amount of sugar in the cake, very often I use less. Same goes for the topping, I just add things until it feels right between my fingers, not oily but not like sand.
