Actually, my dd makes it. I think this is what she does.

Boil beets until tender. Cool, Peel.Slice thinly.

Put in a bowl and mix with vinegar, a little oil, salt, pepper and a little sugar.

I'll double check with her when she gets home. If it's any different I will post it later.

It calls for frozen peas. To be honest, I've never made it before but my SIL makes a similar one and it's delicious.

1 (1 lb) bag frozen peas, uncooked
3 stalks celery, diced
3 scallions, diced
1 jar pimentos or 1 diced red pepper
2 t sugar
1 t salt
2 T mayo

Mix e/t together!

I'm not making anything because I'm sick, I think I'll get DH to cook this week.
I haven't even gone shopping this week, its been the worst week ever. All I really need is a nice bowl of chicken soup.

haven't posted in awhile and I haven't changed, much [:

Challah, baked from the freezer IY"H [last week I baked it, stuck it in the freezer and the kids decided to run away with the freezer key. We had no challah for Shabbos! B"H, we found the back up key which I have hidden better so traucht gut vet zein gut]

My parents and two of my sisters are coming for shabbat. This is the first time my parents have ever come for shabbat, so I am a little nervous (sisters have been before). My mom and one sister are both vegetarians and extremely health concious so I am trying to accomidate them.
Fri. Night:
WW Bakery challah (mixer is being repaired)
sweet and sour meat balls
dips and a doritos salad
"orange" veg. soup
OR
Chicken soup
sirloin steak (oh, did I metion that my father is a carnivor and can never get enough meat?)
WW pasta in olive oil, garlic, cherry tomato, pine nut, and basil
roasted new potatoes with garlic and rosemary
sauteed green beans
Apple crisp for dessert

Shabbat lunch:
antipasti
chopped liver
eggsalad
chumous
eggplants in tomato sauce
israeli salad
DH's famous cholent
chicken
couscous w. sauteed veggies
spinach noodle kugel
Yeshas' brownie, choc. chip cookies bars (I didn't really like the ganash - so sort of made it into a frosting, kind of sorry I didn't use my own ganash recipe)

Seuda shlishit
tuna salads
sliced veg.
any other salad remaining from shabbat
doritos

On reserve I have choc. chip fudge balls (just in case something flops)

I use lemon juice instead of vinegar in mine and add chopped onions.

I've been totally exhausted as my due date approaches, so I tried to keep things simple, even though we're having guests….

Home-baked challah (bought the dough)
Gefilte Fish (bought ready made....only 20 cents more than doing it myself and they even use the same brand I use!)
Mixed green salad with cherry tomatoes and heart of palm
Chicken soup (used frozen homemade stock to reduce work)
Zuchinni onion kugel (this required the most effort of the meal!)
Steamed broccolli
Roasted Chicken

Brownies (I bought a mix….I know, I suck)
Tea biscuits
Orange wedges

Shabbos day:
Just DH and I......leftovers!!

I'm on vacation so we're staying home fri night (a real treat for me bc DH loves going out).
We're having:
homemade challah- from the freezer
fresh salad
flounder with dill sauce
chicken potatoes and rice (one pot Wink
sweet noodle kugel from freezer

Ik its silly that I post here but I get a kick out of posting pathetically simple etc menus....

same fish and salads

Not chancy123, but here goes:

Pickled Meat (Brisket or other similar cut)

4 lb. pickled meat (brisket or other similar cut like top rib, dekel, etc.)
1 c. light brown sugar
1/3 c. ketchup
3 T. apple cider vinegar
2 T margarine, melted
1 T mustard

Boil pickled meat in water to cover, then simmer for a few hours until tender. Slice meat across the grain. Combine remaining ingredients in saucepan and bring to boil. Cook until smooth. Pour over sliced meat and bake at 350 degrees for 35-40 minutes.

If you cannot purchase already pickled meat and want to pickle it yourself, I'd suggest you look into purchasing a product called "Mortons Tender Quick" (has O-U hechsher) which makes it easy and fast.
