batter:
2 lbs chicken cutlets
1 c flour
1/2 t baking powder
1 t salt
1 T paprika
1/2 c water
2 eggs
oil to fry
sauce:
1/2 c ketchup
1/4 c vinegar
3 T lemon juice
1 1/4 c sugar
1/2 c brown sugar
3 T cornstarch
3/4 c cold water
1 (8 oz) can pineapple chunks, drained- I skip
1/2 jar maraschino cherries- I skip
Cut chicken into small pieces or if desired, leave whole. Mix together flour, baking powder, salt, paprika, water and eggs. Dip chicken pieces into batter and fry in oil until golden brown. Dissolve cornstarch in 3/4 c water. In a saucepan over low heat, mix ketchup, vinegar, lemon, sugars cornstarch with water and pineapple. Cook until thick. Pour sauce over chicken (I serve sauce seperately) and top with maraschino cherries.
I just made this on Wednesday night for a buffet and everyone left with a doggie bag of these nuggets.

Think I'll try this for supper tonight, maybe with rice, not sure.
Can use a change from the regular schnitzel.

Was a real hit, even my picky kids loved it (minus the sauce).
It was a nice change.
I was left with a lot of sauce, maybe I would cut the sauce in half next time.

You definitely can half the sauce, or I make the full recipe and use it for other things, like spreading on regular chicken before baking.
This also freezes very well. I mix the nuggets with the sauce and freeze in a pan. It obviously doesn't stay crispy, but it more like a soft sweet & sour nuggets dish, and is perfect for last minute suppers.
