Fancy side dish ideas for sheva brachos

My siblings are making sheva brachos next week, and we need ideas for side dishes.

our menu so far:
fancy challah rolls (small rolls with four toppings)
fresh melon appetizer (with sauce and crunch)
two tone squash soup
stuffed chicken
side dish?
veggy side dish?
chef's salad (deli meats and lettuce...) in the middle of the table
baked apple roses for dessert (which I can post a picture of if anyone is interested)

So now what side dishes can we make? Something that is elegant in presentation.

any ideas, anyone?

I once did mine apple kugels and steamed carrot bundles.its steamed carrot sticks ties with green onion. It looks very pretty.

I posted a bunch of ideas in the other sheva brachos section I'll just put them here quickly
wild rice
orzo
little roasted potatoes

green beans and almonds
roasted veggie (can do shish kebobs)
carrot and snap pea bundles

We just made sheva brachos and it was GORGEOUS. the main dish was a fried chicken cutlet with sauce, stir fry, and an amazing presentation of mashed potatoes: My SIL took flaky dough squares and brushed each corner with a different item: minced garlic, minced onion, poppy seeds, and sesame seeds. On top she placed a scoop of mashed potatoes, and on top of that caramelized onions, and into that, 2 toasted spaghetti sticks. here are photos.

you can pipe mashed potato, and mashed sweet potatoes with a piping tube for decorating cakes. it looks beautiful and is really easy.
or ive seen a half potato baked with three small piped sweet potato "flowers" on it.

you can make kugels in muffin tins. I use the silicon muffin tins so the kugels pop right out and usually don't stick.

what about stuffed tomatoes... there is a really good recipe in the spice and spirit pg. 279 (I think) that could look really nice!!!

Ok, I tried something with pootatoes that my friend told me about, I am not sure I like the way it looks.
It's a flaky square, a scoop of mashed sweet potato, another flake square, a scoop of mashed white potato, and a baked sweet potato curl for garnish. Here goes. and give your opinions please:

The stuffed tomato did not taste good, we thought the filling was good but does not go together with the tomatoe. (The chicken was leftovers, so I chose not to include it in the picture Confused .)

I've never seen such a thing in my life, incredible. I'd love to try it and insert it into a scooped out hole in a real baked apple. MB, those potato squares are so artistic!

You can stuff a wonton wrapper with mashed potato, and tie it into a satchel with a scallion green. Then, boil it in water (oil, salt) drain. Drizzle with a soy dipping sauce. For the side, I’d make French style green beans stir fried with onion and red pepper slivers.
