I am making sheva brochos this week.
I am using the rose as the first course on the table. I fill the bottom of the cup with strawberry apple sauce and garnish with a lemon leaf.
This knish is for the second course. It can also be used as a side dish. It's really simple to make. Use a dough square, cut a right angle in each corner, spread filling. bring the corner together in the middle.
Don't have a picutre of my dessert yet... Can post next week...

How do you make the dough like that for the apple? And how do u make sweet poatoe curles?

I would split the puff pastry pieces horizontal. so they are thinner and not so puffy.

I have made those apple flowers a few times. you slice the apples thin, I used my processor to slice it. then I microwaved it so it became soft and u can bend it and shape then strips. you put them in rounded into the shape of a flower.... I put custard under the flowers!

I did it like this:
Cut apple in half vertically and core with a melon baller. Slice horizontally very thinly keep the slices together. Place sliced apple halves in a pan. Mix liquer with red sugar. Pour about a tablespoon onto each apple. Allow to bake a little over an hour. shape the strips into a rose.

OK! OK! Sorry! I was very busy and didn't have time to post anything till now. heres the instructions:
Baked Apple Roses:
Take a large Yitzy's flaky dough square (one per person). Defrost slightly till it is workable but not too soft. Put it into a cupcake tin without a paper holder (since it is a square that needs to go into a round holder, fold over neatly so it fits nicely.) Only use every other holder (3 out of 6 in the disposable pans) so that the corners have room to hang out.
Mix equal amounts of brown sugar and ground almonds (or any nuts) and put about one Tablespoon into each flaky cup.
Put a piece on parchment paper on top of that and put some beans on top of the paper (to hold down the flaky dough so it doesn't puff up). You can egg the flaky if you want, I did not. Bake it at 350 till it looks ready (about 25 minutes).
Peel and core an apple and cut it in half. put it cut side down on a cookie sheet and slice it thinly, holding the apple slices together. Pour red sugar crystals over the half apple. (This can be bought in the grocery or made with regular white sugar and a bit of food coloring.) Bake it at 350 for 20-30 minutes until it is soft enough to work with. let it cool. Starting with the center slice, take one slice and twirl up. Roll another slice around it. Keep adding more slices until the rose is desired size. (For this recipe, one apple makes 4 roses.)
Remove the beans and parchment paper from the flaky dough. Put in about one Tablespoon of custard (I used store bought kind from Baker's Choice) and put the rose on top. Serve. Enjoy.
(Eat up all the leftover corners of the baked apple )

I see someone was faster than me. I started writing my post earlier in the day, but my baby really needed me in the middle, she is not feeling so great, so I stopped. When I got back I just continued posting and didn't bother checking if someone else wrote anything.
I hope my instructions are clear. Feel free to ask for clarification.
Now back to my side dishes, should I make those mashed potato towers, just split the flaky in half so that they are thinner? Or any other ideas out there?

Wow! It looks gorgeous. When can I make the mashed potatoes? Do they need to be made the day of the sheva brochos? How did you warm it up? I assume you can make the pastry squares ahead of time. How long did it take you to make?
Do you have any ideas for chicken cutlets that don't need to be fried?
I love the mashed potato idea! I am going to try it!

Mashed potato--you can make in advance and microwave. (though I admt mashed potato tastes best when freshly made)
Pastry squares--you can prepare them beforehand, and bake on the day
Chicken cutlets--how about flattening them thinly, marinating in BBQ sauce and grilling/broiling?

Thanks for answering.
I don't own a microwave do you think I can reheat them in the oven?
Also can I bake the pastry squares before and let them defrost on the counter and crisp them in the oven for 3 minutes or so?
And for the chicken cutlets if I broil them, then I have to do that right at the Sheva Brochos right?
Sorry for all the questions but I'm so nervous

Mashed potato--probably heating on a hob would be better, my oven tend to dry things out a bit.
Pastry--bake from frozen. Don't defrost lest they get soggy.
Chicken breast--you can do that the day before and reheat in an oven covered in foil.

I was going to suggest the same thing! I make several types of kugel, noodle, potato, carrot, apple in the cupcake tins and it is very nice.
Also, twice baked potatoes are nice. You scoop out the insides, mix with eggs, fried onions, etc and pipe them back into the skins. It is delicious and nice presentation.
I also like an almond or pecan rice pilaf, and my mom makes a great rice and broccoli casserole.
QQuinoa and craisins is good.
I also started making a green salad, with chopped tomatoes, roasted sweet potato slices, roasted pinenuts, sunflower seeds and pumpkin seeds and chinese pecans. I top it with a basalmic vinegar and honey dressing. It is great.
