is it better to cookl chicken soup covered or uncovered?

uncovered until it gets to a boil so the soup won't run over then covered on a low flame for the rest of cooking time

I let it boil for awhile and then simmer it on a lower flame with the pot covered.

I always remember my mom cooking it with the cover on but slightly askew so some steam would escape so that is how I do. After it first comes to the boil uncovered I turn it down to a low simmer and leave it like that.

I use a pressure cooker but I think covered but slightly open so that it doesn't boil over

It's good to keep it covered because then it cooks better . And to keep it from boiling over, lower the flame after it starts to bubble.

I think that cooking it covered, simmering for a while lets it develop a very stong flavour. While cooking it uncovered helps ensure that the soup becomes very clear. I do a little of both!

Yeah that's how I do it. I keep it more on a medium flame though.

first I boil it with just the chicken in and skim off the fat then I add the veg and let it simmer a few hours.

I used to always cook it covered. Recently I read that uncovered gives a clearer soup. I tried it and found it to be true. So much so that a bunch of elderly ladies eating the soup marveled at how clear the soup was.
