Not squash pie, but maybe this will do. It's for sweet potato pie. It's my DIL recipe and everyone loves it (except for me as I don't care for sweet potatoes).
3 cups cooked and mashed sweet potato (about 2 medium sweet potatoes)
2 eggs
½ cup sugar
2 teaspoons vanilla sugar
½ cup Rich’s Whip
¾ teaspoon salt
A drop of vanilla extract
Mix all ingredients together and place in 8 x 8-inch pan.
Topping
½ cup cornflake crumbs
3 tablespoons margarine, softened
3 tablespoons brown sugar
Mix together and sprinkle on top. Bake at 350* for 45 minutes

Still figuring out the exact things, but it's going to be breakfast for dinner. This is what I'm planning:
Lemon souffle pancakes with blueberry sauce
Corn and fake bacon quiche with cheddar cheese and chives
Roasted peppers with snow peas and some kind of sauce or dressing (maybe balsamic)
Roasted Delicata, Sweet Dumpling and Acorn squash with maple

Don't really know yet.
But I'm guessing:
Store bought challah
Chummus
Gefilte Fish for dh, canteloupe for me and ds1
Chicken veggie soup with matza balls
Shnitzel
Asian Pasta salad
Store-bought potato kugel
Sumthin or other for dessert, maybe homemade, maybe store-bought
For the day meal, just add Chinese Coleslaw, deli meats, and store-bought liver. (Were skipping cholent, woo hoo! Were putting chicken soup in the crockpot!)

don't worry I make the same thing every week, with no changes... nothing fancy at all.
friday night, home made challa
morrocona fish with store bought slads, usually mayo, chrayne, schug techina and chumus.
slads I make is plain TCP sometimes chatzilim and chilba.
soup and knaidle
rice
yerushalmi kugel
and plain chicken
no desrt by night usually.
by day,
challa and matza
eggs and liver plus eggs from cholent
then cholent with jachanun in
and zehu...
