I usually do it as it comes to a boil, but I think I remember hearing you should do it at the end of the cooking time. I'm always afraid I'll forget to salt it if I wait til the end. Is there a reason for waiting? Does it make a difference when you do it?

I don't. I let the diners do it to their own taste. That way, if I have guests who are watching their salt intake, they can eat it, too. I warn my guests that the soup is unsalted and am not offended if they add salt.
