For the stir fry I would just sautee vegies like peppers, onions, sugar snap peas in some oil then add the chicken and some soy sauce, chicken broth and some corn starch to thicken it up. Serve with brown rice.
I like chicken and avacado wraps I would put a layer of honey mustard then the chicken and sliced avacado and serve with a tossed salad- yum

you can also make chicken pot pie.
cut up chicken into bite size pieces put aside. cube up carrots potatoes onions and any other veggies u like. boil up some chiken broth and let veggies cook in this till soft. add chicken and either some flour mixed with water or some other thickener to make it thick pour into pie crust and put second crust on top. cut some clits and bake on 375 for about an hour till crust is browned.

I luv chicken wraps, I grill the chicken w/ bbq sauce on my george foreman, put honey mustard, peppers, onions, lettuce, in the center of the wrap. wrap up the chicken, (u can cut them into strips) heat the whole thing up (in oven or on the foreman) and serve! yum!
