Evaporated Milk

Hi all! I found a great recipe. . .but it calls for 2/3 C of evaporated milk. . . .is there a sub. I can use? Thanks and have a great Shabbos!

I would use 2/3 cup of each of those? Hey that's easy, thanks! Here's the recipe that I thought looked good-

Quick and Easy Pumpkin Pie Squares

Ingredients:

1 package 2-layer-size yellow cake mix
1/2 cup butter, melted and cooled
3 eggs
1 l6-ounce can pumpkin
1 5-ounce can evaporated milk (2/3 cup)
1/2 cup packed brown sugar
2 -1/2 teaspoons pumpkin pie spice
2 tablespoons granulated sugar
2 tablespoons butter, softened
1 teaspoon ground cinnamon or pumpkin pie spice
Whipped cream
Steps:

1. In a large bowl, combine the dry cake mix, the 1/2 cup butter, and 1 of the eggs, beating until combined. Reserve 1 cup of mixture.

2. Spread remaining mixture in an ungreased 13x9x2-inch baking pan, pressing to form an even crust.

3. For filling, in a medium bowl, beat together the remaining eggs, the pumpkin, evaporated milk, brown sugar, and pumpkin pie spice. Pour the mixture over the prepared crust.

4. Combine the reserved 1 cup cake-mix mixture, granulated sugar, the 2 tablespoons butter, and the cinnamon. Dot evenly over pumpkin filling.

5. Bake in a 350 degree F oven for 45 to 50 minutes or until knife inserted near center comes out clean. Cool in pan on wire rack. Cut into squares. Serve topped with whipped cream. Store in the refrigerator. Makes 12 servings.

well, for all the many pumpkin/sweet potato pies and cakes that I've made over the years I always use the same measurement and they're delicious B"H. hatzlacha!

I found this recipe, although I've never tried it- I normally just use coconut milk

Vegan Sweetened Condensed Milk Recipe

Ingredients:

* 2 cups soy milk
* 1 ¾ cups brown sugar
* 2 Tbsp. corn starch

Directions:

1. Measure the corn starch into a small glass or measuring cup.
2. Add 2-3 tbsp. of the soy milk and whisk with a small whisk or fork until smooth.
3. In a small saucepan, heat the remaining soy milk and brown sugar. Whisk in the cornstarch-soymilk mixture.
4. Bring to the boil, stirring constantly until thick.

Sweetened condensed milk is not the same thing as evaporated. Evaporated doesn't have sugar in it--it's just boiled down milk. Cream is the usual substitute for it, so I would use Rich Whip or other creamer.
