How do you peel them? Or do you just chop them in two & dig out the pulp? I had a recipe once, I'll try & find it.

I actually dont have a clue. I saw them on sale in the supermarket bc its halloween so I thought I would buy one and try make some different type of soup with it.

I just got this recipe and am planning on making it for Friday night. It looks very interesting

Spicy Coconut Pumpkin Soup
1 tablespoon Extra Virgin Olive Oil
1 medium onion, finely diced
3 cups canned organic pumpkin puree (I will cook up the pumkin and puree it myself)
2-1/2 cups vegetable or chicken stock or water
2-1/4 cups coconut milk
Salt to taste
½ teaspoon black pepper, freshly ground
1 tablespoon ground Ginger
1 teaspoon Garlic Powder
1 tablespoon Cumin
1 teaspoon Turmeric
1/2 teaspoon Cayenne Pepper
1 teaspoon Cinnamon
1 tablespoon coriander powder
1/2 cup raw Shelled Pumpkin Seeds

Making the Soup:
In a large heavy saucepan, heat olive oil and sauté onion over medium heat for 10 minutes, stirring often, or until the onion softens. Stir in the pumpkin puree, then the stock, a little at a time, until the mixture is smooth. Next, stir in the coconut milk and add Himalayan salt, black pepper, ginger, garlic powder, cumin, turmeric, cayenne, cinnamon and coriander powder. Bring the mixture to a boil. Turn down the heat, and simmer for 5 minutes. Ladle into 6 bowls and add pumpkin seeds as a garnish.

Roast pumpkin soup

I make this and it is a HUGE hit with everyone in the family. Just warning you though - it does get thick, so I always add extra liquid, especially when reheating it.

coconut milk and soy milk are very different flavors.

I actually have both maybe I will try it. It sounds really yummy
