It's a halachic issue. Peeled eggs, onion, snd garlic left overnight is a sakanah.

If I buy peeled garlic from the supermarket is that ok? Or I need to add salt? How would I know if the store has them overnight?

Never knew cooked eggs are a problem, only raw. I sometimes peel and keep in a container with water.

Commercially prepared has a different status and is allowed overnight. Same for frozen chopped onions, etc.
