What kind of tablecloths do you have? Or will you buy to match the vases? Usually you decide on a color scheme and then you choose the vases and flowers accordingly. In Monsey there is a beautiful centerpiece gemach, if that's applicable for you.

I buy the cylinder vases at dollar store stick in 1 orchad in or even silk cherry blossoms from dollar store. Put beads in bottom that match colors. Fill with water. Can light floating candle on top. But that will only be nice Friday night.
Tall thin vase (I saw from Gemach) with 2 large roses and some baby breath. It was like a test tube size in a wooden base. An idea similar to this: https://a.co/d/iVTta3S

I just did this for my daughters bat mitzvah. Bought clear glass vases at the dollar store and an assortment of pink and white flowers at trader joes as well as assorted greens. I think it was about $100 total and I got 8 stunning centerpieces out of those flowers. You can go with any color/type flowers that suit your color scheme and budget.
