What does gloomy mean?
I second heating the oil. But don't know if it will fix your problem withhout knowing what it is.

I have the same problem and can’t figure out what’s causing it. The center comes out hard and gummy.

I’ve been using this no-fail recipe. It’s a huge hit in our house every time.
The Ultimate Potato Kugel
Author: Esty Wolb
Ingredients
* 5 lbs potatoes, peeled
* 1 large onion
* 5 eggs
* ¾ cup oil
* 1 Tbsp salt
* Black pepper to taste
Instructions
1. Preheat your oven to 450°F
2. Process the onion using the S blade of your food processor, scraping down the sides of the bowl midway to make sure it is finely pureed. Switch to the Kugel blade and process the potatoes. No need to empty the bowl in between onion and potatoes.
3. Working quickly, crack the eggs into a bowl large enough to hold all the batter. Add the oil and seasonings and mix well. Add the processed potatoes and onion and mix until uniform. Pour into a greased 9x13" pan and bake uncovered for 2 hours.

Faigy Murray (my kitchen my studio) says to not to over mix the eggs as that can lead to a gummy texture. So give it a quick mix/a couple of pulses in the food processor and not more than that

love the idea to do the onion with the s blade! I never thought of that - I usually skip the onion.
I like to mix the oil and eggs before, this way I can mix well and add the potatoes directly in so they don't get grey

Try adding in a cup of boiling water and mixing before putting in the pan. It helps the middle to cook evenly

a real baking pan is better than a disposable pan. it heats more evenly.

Mine is similar. Here are the differences:
I add a yellow squash with the onion. It's my own idea to make it a bit healthier. Very tasty.
Add all ingredients except for potatoes together with the onion and squash until uniform in color, just a few seconds. Pour into bekele and then on to the potatoes. Bake at 450 for an hour and 15 minutes.
