Same!! Thought I was the only one. Also washing, peeling and chopping all the veggies, skimming the fat, takes time! Everyone else I talk to is like, "just dump in a pot". I don't get it.

Funnily enough, All the basics are most patchkadik for me
Challah- just a basic recipe but still so time consuming!- shlep out mixer, make sure dough is right consistency, braiding, egg wash, seeds. Shlep out baking trays and line them...Then washing the mixer, putting challah in bags.
Potato kugel- peeling, shredding, need to wash processor.
Soup of any kind- just the peeling and chopping can be time consuming. Unless I take shortcuts like frozen cut up butternut squash or the like.

I don't think I really do any patchka sort of cooking. Closest would be just on Pesach, I make a gazillion "lukshen" out of eggs. And bake hundreds of meringue cookies. Not complicated in any way, but pretty laborious, repetitive, boring and annoying.

My pizza-
Spelt Dough made from scratch by hand
Pizza sauce from scratch with wine and herbs simmered on a stovetop
Chopped fresh vegs for the toppings
I make it every couple weeks
I do it all pretty quick sometimes I even make a veg soup to go with it. My longest recipe I did wld prob be short rib flanken roast had to chop a bunch of mushrooms and vegs cook them first then sear the meat and wash the herbs in soapy water and put it all together it was so time consuming but delicious

The answer to all this is finding shortcuts. A good food processor to dice, mince, shred etc. You can get an appliance to peel. You can use a dishwasher or have cleaning lady wash the utensils. You can get the ready peeled pack of soup vegetables in the grocery.
Having said all that, I'm finding it much simpler to cook simple. Open a pack of macaroni and dump in Bekele to cook. Kids add their own toppings like ketchup ( a definite vegetable in our house) dump chicken in Bekele, pour dressing and bake. Buy split pea soup mix, add pack frozen vegetables and cook.... you get my drift :-)

Maybe not a patchka but Personally I find basic birthday cake more of a headache than every day staples like cookies muffins and challa. Rugalach babka brownie bars and rainbow cake are a few times a year and also dont cause me the agmas nefesh of getting a layered cake just right.

For me that would be homemake fish sticks.
You have to boil potatoes, boil the fish, then mix everything up, form patties, coat and fry.
I wouldn't bother, but dh loves it so I make it super rarely, like for Chanukah...

If you can make something easy or difficult, I tend to pick the hardest way possible.
I will say for me, it is chicken lomain.
** I don’t have enough big pots so I have to do one item at a time.
Buy chicken cutlets form Costco-play butcher and cut them into tiny thin peices.
Boil linguine and drain.
Broccoli-cut, wash, check for bugs and then blanch
Carrots, peel and then cut into matchsticks -blanch (different timing than broccoli, so do it separately
Clean, check, and slice mushrooms
Thinly slice onions
Sautéed the mushrooms and onions. Then remove from the pot because there isn’t enough space for the chicken to brown.
Sauté the chicken until cooked through, but not over cooked.
Add everything to the pot (may need to take out 1/2 the chicken and make as 2 batches)
Add sesame teriyaki, honey, and cornstarch in water.
It’s really not hard. It’s just not having enough pots and cleaning the veggies/dicing the chicken. I could buy chicken for stir-fry, and use frozen vegetables, but the price point on the chicken is insane and the frozen vegetables are soggy and will not be eaten.

I love to patchke. I never met a recipe that daunted me. I’ve made a 3 day sticky toffee pudding (only made it once. Wasn’t that technical)
2 day prep croissants and cronuts. I make those every 2-3 months
Anything with pistachios because I go through the trouble to remove the skins which I find extremely annoying but I hate when pistachio foods have a brown color.
I also enjoy making things from scratch. For example this week I’m making my kids homemade strawberry marshmallows
