She said to roll out the pieces of dough flat with a rolling pin, and then roll them up into strands before braiding them, instead of just rolling the pieces of dough into strands right away.

Supposedly adds more fluffiness.
But I personally wouldn’t do it.
I can’t justify adding such time consuming steps to my challah baking.
I have more important tasks
