Question about tracking calories and meat

I have 8 oz ground lamb. Raw. I look it up and find it's got about 640 calories. But then I make 2 burgers and cook them and lots of fat drips out. I only eat one burger. But 320 calories can't be right. Because plenty of fat came out that I'm not eating. So what should I log it as? How does this work when trying to keep a food journal and track calories?

You could measure the fat that drips out and subtract 100- 120 calories per tablespoon. Practically speaking, I would just go with the stated calorie count. The difference is not going to be that much unless you're eating an 8 ounce burger.

Or you can Google how many calories are in a cooked burger.

I looked at the food calorie guide in the back of Body & Soul, it says:

trimmed, 180 cal / 3 oz
untrimmed, 240 cal / 3 oz

So let's guess that not more than half of the fat dripped out, so I'd make it 210 per 3 oz which would be about 280 or rounded up to 300 cal for one burger.

In my experience counting cals, better to err on the upside than the downside.

Also, these calorie charts are never precise, it's impossible because each body processes food differently, get different amounts of energy out of them, which is why the chart I'm using (mentioned above) rounds everything off to make estimation quick and easy.
