I slice it, wrap it in portions of 2-4 ounces each, freeze it, and take out as much as we need for each day. I make whole wheat challah so we're not guzzling white bread. I buy commercial bread when we run low, which happens mainly if we go away for Shabbos.

Leftover challa makes the best breadcrumbs ever ! I cut it up and toast, then cool and blend in food processor. Store in freezer.

Challah kugel - sweet or savory

Remove crusts
Tear into chunks
Pour some water over
Squeeze into a dough
Add eggs
A little oil

Sweet

Add sugar, vanilla,
Optional - thin apple slices
Sprinkle with cinnamon
Bake

Savory

Add sauteed diced onion
Optional - and sauteed diced celery
Dried parsley
Salt & pepper
Bake

Savory kugel makes great stuffing,
Stuff under chicken skin

So. Much. Work.
(Unless you do it every 6-8 weeks, I am not taking out and washing my food processor.

So you're using uncut challah for grilled cheese etc? Why wouldn't you just put it back in the freezer and use the following week?

I use left over challah and bread for kneidlach, for soup. My kids love them.
Basically, moisten, rub into crumbs, add several eggs, a bit of water and spices, roll into balls and off we go.
