I want to make the carrot muffins from kosher by design kids in the kitchen. Can someone please post the recipe for me? thank you!!

1 cup sugar
1 cup flour
3/4 canola oil
12 ounces of baby food carrots (three jars)
1 tsp backing soda
1 tsp cinnamon
2 large eggs
preheat 350
mix sugar flour and oil, add baby food, add baking soda, cinnamon, and eggs
mix with electric mixer until smooth
bake for 30 min

Has anyone successfully tried to half this recipe? Would I use 1.5 jars carrot baby food or 2?

Never tried this recipe- is it good?
How many muffins does this make?
& do u use brown or regular sugar?

Great with sweet potato baby food jars as a substitute too!
Also great with squash baby food jars too!

Hi. The baby jar recipe looks nice and moist but need it to be gluten free. I remember seeing a pesach Sol recipe with baby jars but misplaced it.

I know this thread is a few months old, but I was looking for the carrot muffin recipe and this came up. I make it using 1:1 gf flour and no one can taste the difference.

Do you think almond flour would work to make it GF and taste good?

I would try it during the week and see. Almond flour is much thinner than gf flour.
