Yes. High gloss has reflective properties which can magnify imperfections. (Dents, bumps, dirt, etc)

Dirt can be washed , but bumps and dents can’t be.
If you go with a good quality eggshell or satin paint, you should be able to clean your walls too. Maybe not as easily but generally this is what is done.
Semi gloss and gloss are usually reserved for trim and woodwork. On actual walls, I’ve only seen in bathrooms.

In my opinion, chantilly lace is very very white. I like it for moldings, but personally find it too stark a white for the whole wall.
It is a matter of preference. You should try a small sample and you'll see your preference clearly

I picked the colors myself I did cloud white. I love it. It’s in between white dove and chantel lace. It’s a true cream.
