I sauteed lots of diced zucchini and carrots, thinking I'm going to make soup. I had used the slicing blade on the food processor that cuts the vegetables into this round slices. I now decided I want to make patties/latkes out of this dish. Most recipes call for shredded vegetables. Is it a problem if it's not a shredded "mush"? Also, do I need to add onions? Thanks.

Yes, adding onions is preferable. I would place it either in molds or cookie cutter into the pan greased with oil, then filling them up to the brim.

I added eggs and whole wheat flour but they're crumbling. I think I want to make a kugel out of it. Should I add more eggs or flour? Ty

If you fill the mold to the brim and press it down it will combine while frying.
For the kugel you should add more eggs
or you can make veg blitzes or veg knish
