Im looking for an easy One Bowl Carrot Muffin recipe, made with lots of fresh carrots, so I end up with a very orange colored fluffy muffin, rather than a muffin with some orange flecks.

3 c carrots (about 3 med carrots)
1 banana
1 c sugar (I put a bit less)
1 1/4 c flour
1 tsp baking power
1 tsp baking soda
1/2 tsp salt
1/2 c oil
3/4 tsp cinnamon
2 eggs
Shred the carrots, mash the banana (with a fork is fine), add rest of ing and mix.
Bake for 35 minutes on 350.
Yields 18 muffins.
It is soft and delicious.

3 cups grated carrots (1 lb bag)
1 cup oil
4 eggs
Optional frosting
3 oz cream cheese (1/2 brick)
1/4 cup butter (1/2 stick)
1 tsp vanilla extract
2 cups confectioners sugar
