I eat more volume than any other member of my family.
I have maintained a slender body this way. I eat fruit when others snack on crackers or cakes. On shabbes I eat one slice of pretzel challah ( no eggs ) or I'll have whole wheat matzah. |
Just want to point out 2 things.
1) this is NOT a healthy way of life
2) your daily calorie count is probably very low, even if your portions are large.

You sound like me. I just went to an Endo and had blood taken and everything was in normal range. She still diagnosed me with insulin resistance due to the fat being mostly in my belly. She put me on metformin to try and see if it will help with my already very healthy diet. Insulin resistance can make it difficult to lose weight even with healthy changes bec if you are eating correctly but the insulin is not taking the glucose into the cells and left in the blood you will gain weight. Even if your blood sugars look good and a1c is good now. The belly fat is the risk factor that blood work can end up changing quickly. I'm only in my first week of metformin but I do see a change in cravings. Even if I was eating healthy before I still craved sweets. This is making it so much easier to crave fruit instead and listening to my hunger and full ess cues. Just less noise

There was an influencer on such a diet recently who collapsed & died suddenly from malnutrition after eating like this for a long time. |
Meh. I have been whole plant based for half a decade, vegan for more than 15 years. I am physically active, dance zumba, teach 4th graders, run a non-profit burial society. I get enough protein because all living things have protein. And beans are high enough in protein . We do not need animal products and if a mother is struggling with unhealthy weight gain and wants to eat like a human being and not rely on expensive powders, shakes drugs and wants to feel nourished and full after a satisfying meal, I recommend whole plant based.

That’s 5 years, not very long.
Eating like a human being is eating more than you are. This is not an ideal.

I was never able to lose weight and I was recently diagnosed with PCOS and insulin resistance which is known to make it harder to drop pounds.
Hoping with this knowledge I can finally do so with the correct guidance.

Yes it is much harder to lose weight with pcos.
Again, how does the argument of calories in vs calories out explain that one???

Is medication the only way to deal with insulin resistance? Is there supplements or vitamins or something alternative that would work?

Vegan is not the issue. You still need complete protein (all amino acids) & some fat.

And what about vitamin B12? You can only get that from animal proteins
