Fresh tuna recipes-not pan seared

I have tuna steaks in my freezer. Aside from just searing them, anyone have other recipes for them?

What are you looking for if not seared, baked? It gets overdone if baked.

We enjoy it seasoned and seared. Sesame crusted. Tuna tartare. Over poke bowls, over niçoise salad.

Frozen can be enjoyed as tartar if it's high quality, most fish stores aren't getting fresh tuna, it's usually flash frozen.
I find the Shoprite frozen tuna very decent quality and pretty good in tuna tartare.
Let me know if you'd like a recipe for that.
Otherwise I sear it, either marinated in soy sauce, a little sesame oil and a lot of pepper or marinated in the same mixture and then coated in black and white toasted sesame seeds.
Both ways are delicious and as ra mom said, I don't think tuna is really good baked, it'll just get dried out.

The first bais ya'akov cookbook has one with a sauce (either balsamic or soy sauce based I can't remember). It's delicious but I haven't made it in years

for 2 tuna steaks, defrost it slightly in a bowl of cold water (in the wrapper)
When it's semi defrosted cut into small cubes
Add to the bowl: (amounts are all approximate, taste as you go along)
2 T olive oil
a few scallions sliced thinly
1 jalapeno pepper, cut into tiny cubes with seeds (if u like heat)
1-2 T black/white toasted sesame seeds
1-2 T honey
1 tsp sesame oil
abt 2 tsp salt
fresh cracked black pepper
1 T soy sauce
mix and taste and adjust

Serve it in taco shells, ontop of sushi rice with avocado, serve it on crispy rice, in a poke bowl...

For tuna tartare

2 tuna steaks, very small dice
2 tbsp soy sauce
1 tbsp honey
2 tsp lime juice (or lemon)
1 tsp toasted sesame oil
1 tsp Sriracha
1 pinch ground ginger
2 scallions, sliced

Mix and set bowl over some ice.

Meanwhile dice up 2 avocados. Lightly spritz with lime juice and sesame oil. Add a sprinkle of garlic and salt. Use this as your base.

Top avocado with tuna mixture. Garnish with black and white sesame seeds, if desired.
