I have a shabbos dinner set of 8 of each plate.
We are a family of six.
I find I dont have enough for shabbos day meal.
How many plates do you have for this size family?

I have service for 30. I want to know that I won't run out of I have guests. I used to have for 12 and never had enough.

I have 14. We are 8 ppl.
But always wash Friday night. I don’t like having so many dishes hanging around dirty.
If we are more than 14 ppl I use plastic bec it is too many dishes.

with cold water?

If you have guests you definitely need more.

We have a service for sixteen. The family is six children, all of whom are now married, and have children of their own. That means it's unpredictable how many will be at the Shabbos table each week, and little children don't get the good china, anyway.
If its going to be more than about fifteen adults at the table, we use disposable. Otherwise on Friday night we wash dishes as we go, normally between courses. Cold water isn't ideal, but if you wash at once, it works well enough. Shabbos day we leave them until we can use hot water.

I bought a set for YT use only. 12 persons
I bought another six a year later.
18 isn't too much.

It's better than eating the dishes from Friday night until after Shabbos.

I'm the opposite plastic Friday night and real shabbos day because I can wash those right after shabbos.

You can heat up water in a basin before shabbat and keep covered with foil
Or just use plenty of soap.

I have service for 16 but by now it's more like service for 12. They were s gift when we got married 20 years ago, I don't love them and I don't know where to buy more, it's not a classic company.
If it's just my immediate family we have enough but after that it's plastic. The cost of replacing it all is just daunting and so I just don't.

I have a set of 18 for a family of 12 bah. I leave a big pot of water on the blech from before Shabbos to use for washing up Friday night.

Count up how much you're spending/throwing away on plastics. Try to put the same amount aside each time you buy new plastics, and it won't take too long to have most of the money for a new set.

If you mean storing those huge "Hungarian" fancy sets including soup terrine serving plates and delicate coffee cups with plates then yes.
Some years ago I found an excellent solution to store plates, a metal plate rack which fits in the cupboard's corner. The best! No more lifting soup plates since the big plates are stuck under them.
I immediately bought four of them. They last a life time since it's stainless steel.
But yes, in the end you do need shelf space.

In Israel the cold water is not very cold most of the year. So washing dishes in "cold" water is doable.
