I notice the term “Dayan” is frequently used here.
I grew up with “Rav” as the term for a halachic authority.
I’m just curious-
What, if any, are the practical differences between Dayan, Rav, Posek, etc.?

I think the people who use the expression Dayan are generally chassidish.
I have rarely heard it out of chassidish circles.
Any Rav who paskens shaylahs is a Posek

True. chassdim that have a Rebbe, call their rav 'dayan' cuz they call their rebbe "rav" or "rebbe"
a dayan is someone who has semicha and paskens shailos (same as rav)

In litvish circles a Rav can mean anyone with semicha (even though not all Rabbeim have semicha), or specifically someone who paskens shailohs.
A posek gives psak on shailohs.
A Dayan has special semicha in dinei mamonos/chosen mishpat (monetary law) who usually serves on a Bais Din
