Iso recipe for hearty vegetable soup

I'm in the mood of soup. I don't know how to make a good basic vegetable soup. Can you share your best recipe?

I made a minestrone this week which was yum!

Dice: carrots, celery, onions (equal amount, about 4-5 stalks of celery, 4-5 carrots, 1-2 onions. Mushrooms would also be very good in this soup.
Fry veggies in the pot with olive oil until it turns a bit golden.

Add spices: paprika, turmeric, thyme, cumin. black pepper, salt. Two spoons of tomato paste. Mix well and add water.
Ratio of veggies 1/3 of pot and water the other 2 parts (about a liter)

Add a bean or grain such as red kidney beans, or types of beans, or pre washed quinoa.

Simmer for about 40 mins to an hour. Squeeze half a lemon into the soup- it gives a yummy flavor. (Make sure not to add the seeds)

Also eta you can add pasta in the last 10 mins instead of beans. it’s also yummy

This recipe is also delicious with chicken added for a meaty soup

Sauté diced onion, leek, squash, carrot, celery, Parsnip, on low for a long time till soft. Add a few cubes of frozen parsley/dill, salt, and pepper. Add water to at least to cover or more. Boil for an hour.
Optional: Ialso add chicken cutlets to sauteing vegetables, and when soup is done boiling I shred it.
Also an option, if I find with a Hechsher I’ll add chopped kale.

The base for any vegetable soup is onions sauteed for a few minutes. You could also saute celery and/or carrots along with the onions. Then add garlic and saute for a minute or so (don't do it for too long or it will burn).

Then add a bunch of chopped up root vegetables, if you like those. We usually do sweet potatoes, maybe some more carrots, parsnips, turnips, rutabaga, whatever looks good when I'm shopping.

Then add broth or water--if you use water, you will need to add extra spices or soup powder to make it flavorful. At least enough to cover the vegetables, but you can add more than this, especially if you're adding raw grains later (they soak up liquid). Then add any spices you want, and tomato paste if you want it to have a tomato-y taste.

Bring it to a boil, then simmer until vegetables are soft enough for the side of a fork to slide through them. How long depends on how large you cut them.

If you want to add grains, do it now. Boil or simmer for as long as the package calls for.

You can also add frozen veggies at this point--frozen mixed veggies, frozen green beans, frozen carrots and peas...This might be overkill if you're using a lot of root vegetables, but you can make a soup without any root veggies and just do the onions/garlic, tomato paste and spices, and then frozen veggies for a really easy soup that you barely have to chop for.

Taste the soup, adding more spices, especially salt, as needed.

My family loves this recipe: https://www.eatingbirdfood.com.....5170. I leave out the potatoes (we don't like them in soup) and add a can or two of garbanzo beans.
