Thanks!

I feel it's more about the method of cooking and the amount of water then what exactly is put in and how much of everything. I love love love the between carpools recipe for pareve cholent and I just add the meat with a little more water in a crock pot Friday morning on high and then switch it to warm right before Shabbos!!!!

This looks like what you’re asking for op. If you want authentic, heimish, don’t add bbq sauce, coke, beer, ketchup or stuff like that. There’s only one thing missing here, there’s no onion. Onion base is most important for that heimish flavor. Sauté a diced onion or two in a few tablespoons oil. Sprinkle salt and paprika on the onion while it’s sautéeing. When the onions are done put the meat on top, sprinkle spices and let it all sauté together for a while. Make your cholent on top of that. Be generous with the minced fresh garlic. You don’t need to use a measuring spoon like in the recipe. Use at least 4 cloves of garlic, eight is better.

That's a lotta beans. Though I guess if there are no potatoes, it's not as much as I think. What's a little barley? How much meat?

In crock pot, saute onions in some oil with salt and paprika. Add some cubed potatoes. Flanken (with bones).
Separately, soak and bring chulent beans and barley to a boil
Then rinse off and add to the crock pot.
Add water, to cover about two inches or more above the contents, as desired.
Leave in crock pot, until serving time.
I prepare on Thursday or Friday.
I put it in on high, consistently making sure there's enough water, and then lower the temp to medium for Shabbos.

I don’t use two whole packs of beans. A cup each of two types of beans and 1/2 to 3/4 cup barley. For a less traditional cholent for kids who like barley I use two cups mix of beans, one and half cups barley.

1 pack mixed cholent beans
1/3 pack pearl barley
3 tbsp oil
1 tbsp paprika
1 tbsp salt
1 tbsp onion powder
3 frozen garlic cubes
hunk of meat (not cubed)
8-10 cups water (it needs tons to make that creamy texture from the barley and oil)

Low for 24 hours. Really really good.

I agree it's a lot of beans and I barely have room in my crockpot for so much so I usually use 1 1/2 cups of each package of beans. But then my kids complain that it doesn't taste like the chulent that it's supposed to taste like- dunno, I think it's delicious regardless. I also usually add 1-2 potatoes. I need to get a bigger crockpot.
I add some kishke.
Maybe half cup barley? Don't usually measure.
And A LOT of meat. Or three packages flanken

Caterer/takeout cholent doesn't always have potatoes in it. It doesn't reheat as well. And we've all come to enjoy the texture.
