I don’t know the technical difference, but they taste totally different. Yellow mustard has a more mild flavor. Dijon is much sharper

Dijon mustard is the only mustard that doesn't really separate and need mixing.

Yellow mustard is milder in flavor & has less vinegar to it. But its very versatile that way.

They taste different but not crazy different. I've used interchangeably in some recipes (where the amount is minimal, like 1 T or less). But I'm not picky.

I doubt Dijon mustard contains sugar.

I don’t ever buy yellow mustard because I don’t like the taste. I use Dijon or brown mustard in every recipe that calls for yellow and they always come out delicious.

Yellow mustard is smooth and brite yellow. I don't particularly go for the flavor on its own. Dijon mustard is slightly grainy and made with white wine. I enjoy it. (But mustard in general was a taste I acquired only as an adult.)

thanks so much for all your responses.

If I want more of a natural mustard thats wholegrain, without sugar and other unhealthy stuff.
which should I buy?

new to mustard. never used it before.

I thought mustard was a plain ground seed made into a paste, I didnt realise its got more ing to it.

You can make it yourself with ground mustard.
