I'm totally out of veggie sides that I haven't yet done for first days. Any new ideas? Here's what I have already done:
Broccoli
Zaatar cauliflower
Marinated portobello mushrooms
Green beans
Roasted potatoes
Corn on the cob

Stir fry vegetables
1 onion cut in strips
⅓ bag baby carrots
1 green squash in strips
1 of each green, yellow, red pepper
Can add any veg of your choice; mushrooms, etc.
(sugar snap peas and baby corn)
¼ cup brown sugar
¼ cup oil
⅓ cup soy sauce or less
2 Tbsp vinegar
1 ½ tsp garlic powder
Marinade for half an hour and bake uncovered for half an hour

Anyone has the recipe for vegetable quiche roll? You see it in dairy restaurants with cheese inside. I would do it without the cheese for yom Tov.

Layered zucchini tomato bake
Spaghetti squash salad or zoodle salad
Sautéed spinach and colorful cherry tomatoes

Small eggplants boats with tehini, maple syrup, pom seeds & pine nuts

Roast and scrape out spaghetti squash. Add halved cherry tomatoes, diced persian kirbies, baby spinach, red onion, garlic, lemon, olive oil, salt, pepper, a touch of oregano, and toss.

Sounds yum and different! Does this keep well in the fridge?

The spaghetti squash keeps well plain. Chop veggies and toss fresh.

Easy roasted Zucchini
Cut squash in circles, lay on lined baking sheet, spray well with oil spray, sprinkle with salt and garlic powder, air fry on 425 for around 25 min. If you don't have air fry on your oven you can probably bake at 425 for similar results
Easy roasted mushrooms
Wash whole white mushrooms well. Place in baking pan, drizzle with canola or olive oil, sprinkle with salt and garlic powder.
Air fry at 425 for around 35-40 minutes, turning the mushrooms over in middle.
These are best served fresh but can last in the fridge for around 3 days
