I am all cooked out. Not so much that I am tired (okay, maybe a little) but my creativity "muscles" are fried. Can you give me some ideas for yummy, healthy, slightly different dishes for the 2nd days??

Stew beef and potatoes baked in 9x13 pans
Boneless chicken legs cut in cubes baked with vegetables
Baked shnitzel
Marinated mushroom salad with peppers and baby corn.
These were my favorites this year.

Maybe we should each list our favorite easy yummy dishes from rh and first days. After all,one person's boring "same old" is new to someone else.
I made something for 1st night that everyone really loved. It was Apricot chicken with delicata squash (I assume you could use regular butternut squash cubes).
I arranged chicken pieces in a pan surrounded with the squash. Poured on a mixture of Apricot jam and fresh lemon, with a little ginger and grated lemon peel. The squash absorbed all the flavors and it was just delicious to

375 uncovered just stew beef and marinade cut up into tiny pieces for 1 hour, mixing halfway. Then add potatoes tossed with oil and salt onion garlic turmeric. Add to meat. Mix. Bake uncovered for 1 1/2 hours. Mix occasionally.
Reheat for the meal covered.

I made a korean inspired salmon bowl for one meal. My kids loved it. They love dishes that have them assembling their bowl with the different toppings according to preference.
We also had a delicious eggplant meat rollatini at someone's house. And we enjoyed a deli roll pie type thing.
Also, I'm going to be trying a fish ball with chickpea dish for the last day. I've had it at someone's house before...it's very good.

Sure! I just rubbed seeded mustard over the top of the corned beef and sprinkled brown sugar. Cover with 2 layers of foil and cook at 300-350 until tender (it took a bunch of hours at 350 and then more at 300).
This is not a pickled corned beef.

Corned = pickled.
What kind of meat did you mean when you said corned beef?

This was a big hit:
Fake General Tsao chicken
Cut up pargiyot (deboned thighs) into little pieces. Dredge with corn starch and fry on both sides. Set aside.
Sauce:
1 Tbsp garlic powder
2 Tbsp sesame seeds
2 Tbsp vinegar
6 tbsp soy sauce
2 Tbsp teriyaki sauce
6 Tbsp sweet chili sauce
6 Tbsp honey
3 Tbsp cornstarch
1/4 cup water
Mix, add to chicken before warming up to serve.

My signature dish is pumpkin stew. A beef stew that is cooked and then poured into a cleaned out pumpkin and baked. I posted it years ago on imamother. I can look for it and bump it up if anyone is interested.
