Can I make this recipe with just the vegetables and skip the dough? Do I need to adjust the baking time?

You can do your own thing and layer up zucchini and tomatoes and roast in a nice dish.
Could be something like this or anything else you like, like the slices going around in a circle, within a round dish.

Yeah I looked at the first and last of these. I don't know why they didn't talk to me. I think I can mash all these up and make something good.

I would slice up zucchini, yellow squash and tomato. Make a nice overlapping pattern in a dish. Brush everything with oil that was mixed with crushed garlic. Sprinkle with salt and pepper. Bake uncovered at 400. See if it’s ready after 20 minutes (if it's in a disposable tin, or packed tightly, it may take longer).
