Last year for pesach an organization sent me some food and one dish was a roasted eggplant that I want to re create. It was thick slices so not totally mushy but the flesh was soft enough to spread and it was so good. How do I do this myself?

Get an eggplant. Cut it in half. Spices and oil the top. To taste. Stick in the oven 350 until a fork goes through it
