There are 2 ways in a pot or in oven.
In the oven it needs to bake for hours low and slow.
I dice or wedge potatoes. Place in deep pan with water, salt, and lots of paprika. Lay chicken thighs and drumsticks in a single layer over potatoes. Salt and paprika on top of chicken. Cover. Bake on around 275 for around 8 hours.
I'm planning to make this Thursday night and let it bake all night on 225.

Sounds YUM! I'm deciding now between this, Chicken rib steak or golash.

I have a standard menu that I do before every fast. I get very stressed and anxious before fasting so this takes the mental load off me
Split pea soup (I add kreplach on erev YK. J make a big pot so it's enough for before and after the fast)
One pan chicken and potatoes (on erev tisha bav I do salmon instead of chicken)
Brown rice
Roasted veggies or salad
Warermelon and grapes
