I've tried lentil pasta (red in color)
It's not as soft as regular pasta. Brown rice pasta had a more mushy (?) kind of texture. Lentil pasta was kind of permanently al dente.
I've never tried chick pea pasta but it's on my list to try out after YT.

On its own not great. Drowning in sauce, delish. Taste is stronger than rice but texture stays good longer.

I tried chickpea pasta for mac and cheese. Had a slightly nutty flavor but was otherwise not noticeable.

We have it at least once a week for dinner. We like it with sauce and/ or a lot of cheese and spices. We being my family with kids- one or two members are gluten feee and I cook all gluten free except challa on shabbos. If you're a real foodie not the same but if u aren't addicted to/ totlaly into the exact way regular Mack and cheese tastes, I think you'd like it in its own right. No one complains here

I personally didn't like the flavor of the chickpeas. I also didn't like lentil spaghetti. I did prefer the brown rice spaghetti as it had a flavor closer to 'real' spaghetti.
But I guess if it's covered in sauce, the flavor won't stand out so much.

I’m not a fan, but my child who has been having it her whole life is very happy with it. Texture wise it’s way easier to work with and has far more nutrition than cassava or rice pasta.

I liked the chickpea. Of all the gluten free pastas banza was my favorite. Shame its so expensive. But I thought the texture was very close to regular wheat pasta.

It was okay. The texture is a little interesting.. I love chickpeas but imho, different tafkids for different foods..

I tried the lentil one. It was ok but different, like a stronger flavor. My picky eater liked it which is saying something. And one actually appreciated the deeper flavor. But look at the nutrition info before buying because it still has carbs and while there was more protein, I don’t remember how significant the difference is - regular pasta has a little protein.
