And if I do toast them can they be toasted in a regular stainless pan? Or does it have to be nonstick??

You mean buckwheat? You don’t have to do any of those things. Just cook it like any other porridge. 3 cups of water to one cup of buckwheat, bring to a boil, and let simmer on a small flame. You can toast the kernels if you think that improves the flavor, but it’s not necessary.

Yes, I started skipping the egg years ago when friends who we would often host for shabbat meals became vegan and I've never looked back.
I just toast the kasha in some oil before adding the boiling water.
Comes out great. Don't miss the egg at all.
