Would vinegar on Shabbos be fine because it is no longer Rosh Hashana? What is the reason for not having vinegar?

Its because its bitter.
Its not my minhag if the whole dish is sweet so I don't worry about it.
Some people have the minhag through aseres yimey tshuvah.

Is it ok to use Dijon mustard in a recipe? How far do we go with the vinegar issue? Doesn't mayo also contain vinegar?
