Whenever I need to make a large batch of dough I lug out my Kitcehnaid Professional 600 series (7 qt). Problem is the dough doesn’t seem to knead it into a nice ball…it just keeps spinning and spinning but it never comes together in a ball. It just “climbs” up the dough hook.
Any advice?

When that happens for me I add flour until I get a consistency I like. But yeah there is a degree of babysitting it until it behaves and kneads together nicely.

you are bettr off with a bread machine. a mixer isn't meant for that. you risk burning out the motor too

My Kitchenaid is 5 q and my challah recipe uses 3 c flour so I don't know if this is relevant. I replaced the C shaped hook with an S hook. The dough doesn't climb too high.
