Any one have an easy recipe for Vanilla Ice cream? I want to serve it for dessert with hot apple cobler, but I don't want to spend $10 on a tub of the store bought stuff.

Do you have Spice & Spirit?
There's a recipe called "deluxe pareve ice cream" that is really good. Cocoa is listed as an optional ingredient, so if you want vanilla ice cream, just leave out the cocoa. (That's what I've done.)

I make this recipe sometimes : put 3 eggs and 1/2 c sugar in mixer at high speed for like 10 min until it gets fluffy. add one small riches whip and some vanila extract-beat intil stiff and freeze it...

Here goes...
Deluxe Pareve Ice Cream
6 eggs, separated
1 cup confectioners sugar
2 tsp. vanilla extract
6 T. light corn syrup
3 T. cocoa, optional
2 10-ounce containers nondairy dessert topping
In a large mixer bowl, beat egg whites until stiff, gradually adding confectioners sugar. Set aside.
In a medium mixer bowl, beat together egg yolks, vanilla, corn syrup, and cocoa if desired. In a separate bowl, beat dessert topping until stiff. Add to yolk mixture. With a spatula, fold in egg whites. Pour into 9 x 13 inch pan, smooth top. Cover wih aluminum foil and freeze completely.

1 10 oz. carton whipped cream
1 package instant vanilla pudding
16 oz. coffee rich (or soy milk)
1 tsp. vanilla sugar
Beat whipped cream. With a beater, slowly add in rest of ingredients. Mix until all blended. Don't mix too much!
