I don't know the answer to the very specific shaila about your own money in the envelope, but it does make me want to suggest a practice that helps me.
I have a cash flow envelope in a hidden place that I set aside a sum for times when I need quick cash. I make sure to refill it after I draw from it.
It's basically like your exercise class envelope, except specifically for quickly needed family cash, and therefore, no shaila about using the money in it.

I'm curious what a rav would say. But I'm wondering if part of the question is whose responsible for the instructor getting paid? If your short at the end of the month do you have to figure out who didn't pay? If someone forgets and its time to pay do you put in the money and they pay you back? Do you give those exact dollars or you keep them and write a check?

Is OP safeguarding the money or is she responsible for instructor to get paid?

Every exercise class I’ve ever been to you prepay for a set amount of classes. Why is this money even sitting around for two months to begin with? Shouldn’t it have already gone to the instructor at the beginning?

The instructor wants a set amount per class, and gets paid at the end of each class. In order to make it easier on us (re dividing the amt, and not scrambling for money each time) and in order to make sure there are enough commitments, between ourselves we pre committed for a certain amount of classes, and ask each person to bring the full amount as soon as they can.
In the past if someone forgot, or we were short, I usually laid out the money- since it was in my house so I had access.

When we had a pushka that we could open (we don't anymore) we would use it to make change. I.e. put in one shekel and take out ten ten-agorot coins, or five ten-agorot coins and one half-shekel. Put in a 10 shekel coin and take out two fives or ten ones. Put in a 20 or 50 shekel note and take out the equivalent in coins. It was very useful.
But we didn't take out.
I grew up borrowing money from the pushka and it always felt icky and wrong. I have no idea if my mother ever put it back, I assume she did.
