Cook it in a pan with bbq sauce or any yummy sauce and make tacos or sandwiches with it

Tacos, wraps, pizza
I heat with some bbq sauce , water and shred.
Tacos or wraps or tortillas - serve with diced veggies, corn, lettuce, cabbage, avocado. Taco sauce and/or techina.
Pizza - mix bbq sauce and Mayo. Spread on pita bread. top with shredded bbq chicken. Broil until toast but not burnt. Serve Mayo bbq sauce as dipping sauce.
Or
Chicken pot pie. I use the chicken and vegetables like carrots and celery and onions from the soup.

I smoosh it up, mix with diced onion, eggs, mayo if it's chicken breast and fry in to patties

Fake Chinese chicken:
saute whatever veggies you have on hand: onions, carrots, red pepper, baby corn. If you have water chestnuts and bamboo shoots even better.
Mix cornstarch with water and add. Add soy sauce. Add chicken.
You may or may not need some chicken broth.
