With lots of 3 day yomim tovim coming up I want a sourdough for each meal but we don’t need 7 full size sourdoughs. There will be so much waste.
I’ve always baked the same size in my Dutch oven.
Is there a science or method on making them smaller.
Or baking in bulk out of Dutch oven.

A full size sour dough is too much for us on a weekly basis. I always cut the dough in half right before shaping. Bake it the same way you would regularly.

So do you bake each half in a separate Dutch Oven?

And how do you adjust the cooking time? Do they grow more flat?

Just divide your dough into smaller pieces.
And bake each one individually in the Dutch oven.
Adjust cooking time down somewhat so it's less time.
A well made sourdough will actually come out just as nice, if not nicer in a pot with more room.

I do it like this sometimes, divide the dough in half when finish rising before shaping. Shape each separately like you would your reg size loaf. Let sit for half hour and reshape. Follow with what you usually do

I make sourdough rolls in mini Dutch ovens. 450° for 25 minutes and then 400° for 20 minutes. This is about 6-7 rolls per recipe

I'm stocking up my freezer for upcoming yomim tovim. What I've been doing is doubling the recipe and letting it rise. Then when I'm up to shaping, I divide in 3 and shape each one. Then bake each in its own Dutch oven.

Another question. When you say you get 6-7 out of a recipe, what size is your recipe? How many grams of flour? Just wondering how many rolls to divide the recipe into.

I don't weigh them when shaping, but it's a total of 1000g of flour and I think the total dough would weigh between 1800-2000g so I guesstimate each bread is around 600-700g.

I get 6-7 out of 500 grams. Around 100 grams a roll
