Is there such a thing as turkey (for deli roll) without nitrates?
Any brands better than others for pastrami and turkey?

Pastrami is never going to be a healhful. Get the best quality pastrami and enjoy a wonderful sandwich as an occasional treat.
Turkey roll is horrible even putting aside the health aspects. I would get actual sliced turkey from a deli but what is very easy is to get a turkey breast - a real one and not a "turkey roll" and cook it. Very simple as I just stick it in the oven with a few normal spices like roast chicken.
