I'm always flopping my fried schnitzel. When I bake schnitzel in the oven it's always perfectly baked through. But it doesn't have that fried fresh yummy crispness. Every time I decide to fry, my schnitzel is still a bit undercooked. Even tho they fry for a while and get nicely browned and crispy on the outside. To all the frying experts: what am I doing wrong?
What size flame should I be frying on?
Pot should be closed with a lid?
How many minutes per side?

use a thermometer to be sure the oil isnt too hot

Sounds like your oil is too hot
Don't put a lid on,
Make sure you have enough oil, even if shallow frying

On 425* for 10 15 minutes flip and bake for 5 more minutes.

To fry-
cut chickens breasts thin.
Mix in eggs and whatever else you want (spices, sauces)
Cover I n breadcrumbs/cornflake crumbs
Heat about1.5 inches of oil in pot on med high until when you out something in, it sizzles
Turn to medium (at least on my stove- but its a pretty large flame)
Keep lid off.
Put shnitzel in as a single layer at a time.
Fry for 3 minutes, turn midway if you want.
(you know its done when the shnitzel will have a firmness to it when you lift it out, not floppy. If you cut it, it will be white inside.)
Remove from oil.

Don't overcrowd the pan. There should be about an inch as separating each piece.

I Fry on number 6 for no more than 3 min per side. Extra thin cutlets. I work with a timer so I don't forget. It's delicious. I use to really not like regular cutlets until I learned this technique. 3 min turn over 3 min out.
