My pepper steak is always impossibly hard. I can't figure out if I'm overcooking it, undercooking it, or just doing it plain wrong.
Can you share an oven recipe that's easy and fail proof?
Saucy with vegetables, a plus.
Prefer oven to stove top.
Want it tender, melt in your mouth type.
If it can be doubled, even better.
If it freezes well, that's a plus too.

The Dinner at the zoo recipe is my all time favorite, and it freezes well
Though, it’s all on the stove (one pan though)

This. It needs 2 hours on the stove on low with plenty of liquid.

Make recipe in a crock pot on low.
Cook at least 3 hours.

2 lbs pepper steak
24 oz broccoli florets
1 zuchini
1 red pepper
1/2 cup oil
1 cup soy sauce
1/2 cup sesame oil
1 cup brown sugar
coat meat with flour in a bag( I do not do this), Spread in a 9x13 pan, put vegetables on top of meat, pour sauce over ( mix the oils, soy sauce and sugar in a bowl together first)
Bake at 350 for 2 hours, covered

I make it in the oven, first hour at 350 and then for hours at 300 to 250

With which recipe? Do you coat with flour and/or saute first?

Hi! Yes! I played with a recipe on a diff thread here and ended up making this in bulk (four 9x13 pans) for a family simcha. Bunch of ppl asked for the recipe and it was a big hit.
I didn't flour and brown the meat, just slivered onions and tossed everything into the pan and straight to the oven.
4 lbs pepper steak (the grocery store happened to have it marked as "extra soft" and it was perfect)
Put in a pan on top of sliced onions, and add:
A couple spoons of jarred minced garlic/ fresh minced garlic (I used jarred)
A few frozen ginger cubes
A cup of BBQ sauce
Eyeballed it but about:
1/4 cup soy sauce
1/4 cup brown sugar
3 tbsp lemon juice
1/2 cup ketchup
Paprika (a couple tablespoons)
Salt (2 teaspoons ish)
Black pepper (1 tsp ish)
3/4 cup water
Bake covered at 325 for 2 -2.5 hours, then take out and add in cut up peppers, cover, and put back in for 30-40 min.
