Duck sauce chicken:
Layer the pan with onions, put in chicken bottoms tightly packed, sprinkle with pepper, paprika, garlic, onion, and thyme. Pour duck sauce over
Bake @400 for 1 hr 20 min, then 10 min uncovered

Fleishigs or milchigs?

For fleishigs:
Silver tip roast (cranberry sauce+ onion soup mix)
Wild rice with sauteed scallions/onions and craisins
Or roasted baby potatoes
Apple muffins
Soup

Milchigs:
Penne pasta with store bought vodka sauce
Frozen breaded cauliflower baked in oven
Veg soup
Mini pizzas
Mini quiches (broccoli or mushroom)
Side of salmon (either one type or different toppings on different parts, I.e. teriyaki, herb, spicy, crumby)
Roasted cubed sweet potatoes (also good for fleishigs)
Salads

Appetizer: salad with cold cuts (lettuce, colorful peppers, Persian cucumbers, toasted Ramen noodles)

Main: chicken or roast(depending on how much you want to spend)
Whole Green beans (in oven, add garlic cubes and olive oil. Optional: toasted sesame seeds before serving)
Basmati rice (in oven. You can do dinner done recipe or plain)

Dessert: ice cream/mousse pies, or chocolate pies/pareve cream cheese pies (both super easy and quick)

Pls post your go-to chicken and roast that are foolproof in large amounts!

Roast: I usually cook overnight (about 7 hours) in oven on 225°. Put roasts in pan with salt, pepper paprika, garlic and lots of onions. Add red wine. (You can add sliced carrots if you want to!) Easy and super delicious! Take out in the morning. Cool and slice. Warm right before event. If you want to make ahead, you can do that and freeze after slicing. I like to thicken gravy with a couple of spoons of corn starch.
Chicken: most of my family like cutlets better than on the bone. Dinner done has a very good recipe for grilled chicken. Breaded chicken is delicious but more time consuming for a crowd. (You can prepare ahead and fry/bake day of)
For chicken on the bone, I have a lot of spices mix, I usually sprinkle one of them and add sliced onions, cook for at least 3 hours! Always delicious. If you want to prepare ahead buy fresh chicken, clean and spice. Take out from freezer night before your event and put in oven the day of! Increase cooking time if chicken is still a little frozen!
You can't go wrong with Duck sauce chicken.

Potato knishes. I freeze them in muffin tins. Pop them out when frozen and layer them in storage pans.

Strawberry/apple crumbles. I bake them in those scalloped muffin holders.

Carrot muffins.

Vegetable kugels.

Soups.

Pastrami rugelach.

Potato knishes roll. Roll out a yitzys puff pastry sheet. Smear mashed potatoes over the entire sheet. Roll up jellyroll style. Smear eggs and sprinkle sesame seeds. Bake at 350. Slice. Can be served with or without a sauce.

Any tricks for doing grilled chicken in bulk? I have the dinner done cookbook and can look up the recipe.
