I usually put:
knob celery
parsnip and or root parsley
carrots
onions
garlic
squash
and either whole chicken or just what we call chicken bottoms.
This is what I have at home now and can’t get other fresh vegetables now. Can a soup with below ingredients have a deep flavor?
Squash
Turnip
Carrots
Onion
Garlic
Celery sticks (which I’m really lazy to peel and wash/clean from bugs)
Chicken bottoms
In other words no knob celery or parsley/parsnip. Yes to a small turnip and celery sticks if I’ll have patience to clean… and chicken bottoms instead of whole chicken.
I have peppers too if that can make a difference.
Cook for shabbos or make do with what I have in freezer?
-we’re having guests who always have delicious food, so don’t want to have an embarrassing soup…

LOL I usually make chicken soup with
onion
carrots
potato
chicken bottom
and it's delicious! I add plenty of salt and dill.
Celery and garlic definitely add a lot but I don't always use them.
Make sure to cook the soup long enough for the flavors to develop.

Always delicious.

I do have necks in the freezer. Maybe I’ll add that too!

It can definitely work! The ingredients don’t seem minimal at all. My friend’s mom makes her soup with just chicken, carrots, and squash, and she really enjoys it. I think the key is getting the ratio of chicken, vegetables, and water right. Just be careful not to add too much water, or the flavor might get diluted.

I always cook in the same pot and put certain amount of chicken/veggies to rest of pot of water. I have less of some of the root vegetables now, but can add more squash/carrots instead.
It’s not minimal as just not what I’m used to…

Just add extra carrots for that sweetness that comes from the other items. Enjoy.
