3 cups flour
3 tablespoons olive oil
3 tablespoons yeast
Pinch salt
1 teaspoon sugar
I cup warm water

Put everything in bowl and knead
Take dough out . Oil the bowl and run the dough over the oiled bowl.
Cover with Saran wrap and rise for half an hour.

I use it for garlic knots all the time but never used it for rolls

Roll dough into small ropes. Knot each one. Bake at 450 for about 12 minutes. Shake baked knots in a Ziploc bag that has oil, crushed garlic, coarse salt and parsley flakes. Serve warm.

Roll dough into circles. Place 1 tbsp diced seasoned onion in middle (onion, oil, salt). Fold in the two ends, add a bit more onion, then fold in the other two ends. Place seam side down on a lined baking pan. Brush with beaten egg yolk, sprinkle with drop more onion. Bake for 35 min.

The ratio of yeast seems off. You sure you mean 3 Tablespoons? 5 lb challah recipes use that much.

I always did it with 3

I think I started doing it when I was short on time…
You can definitely do it with less
